Lazy Dinner

After taking a lovely but very long walk, I was too tired and hungry to wait for something to cook.
I spread blue corn tortilla chips on a large plate, topped them with dollops of canned refried beans, and microwaved them until warm. (I also had a hankering for cheese, but the only veggie cheese in my local supermarket has casein and milk-derived flavoring. Gotta keep keep an eye on those ingredient lists.) Then I topped the beany chips with romaine lettuce, cherry tomatoes, onion, jalepenos (from the jar), cilantro, avocado, and fresh squeezed lime.

Instant gratification.

  1. This salad looks awesome! I love mexican/southwestern inspired salads. It really is great in a pinch because you can just throw in whatever you have on hand & it always turns out great :)

  2. I turn to mexican food too when i'm feeling lazy. throw this and that in a burrito, cover with salsa, wrap. call it a day :)
